The name "Tom Yum" is translated from Thai as "to boil" (Tom), and (Yam) - "to mix" or "salad", which reflects the essence of the soup: a boiling broth with mixed ingredients that give it a hot and sour taste.

Originating in the central regions of Thailand, this soup was originally prepared in a clear broth with fish and local herbs, as fresh seafood was always on hand. This soup has evolved over the decades, reflecting changes in the Thai diet and the availability of ingredients, starting from simple concoctions based on shrimp or fish.

Key Ingredients: The Secret to a Flavor Explosion

It is impossible to imagine a real Tom Yum without traditional Thai ingredients:

  • Giant black shrimp;
  • Lemongrass - adds a citrusy , fresh aroma;
  • Kaffir lime leaves add a complex , slightly bitter note;
  • Galangal - lightly spicy and earthy;
  • Chili pepper - responsible for the characteristic spiciness;
  • Lime juice creates the signature tartness;
  • Fish sauce - enhances flavor and adds depth;
  • Enoki mushrooms - impart a delicate , slightly sweet flavor;
  • Squid - soft marine taste with sea freshness , sometimes with nutty notes;
  • Cilantro - bright , fresh flavor , with citrus , peppery and slightly spicy notes;
  • Coconut milk - soft , creamy taste with pronounced tropical notes;
  • Sugar;
  • Salt.

Thai Tom Yum Soup Recipe from Doorsea Restaurant:

  • First, heat a minimum of oil in a thick-bottomed pot. Fry the ginger, chili and lemongrass until a pungent aroma appears. Then add shells shrimp and fry until they turn bright red and give characteristic "crab" smell;
  • Add Tom Yum paste, heat it with vegetables for 1-2 minutes (this will open up essential oils pastes);
  • Add water and cook at a low boil for 60 minutes. Liquid should evaporate by about 15-20%, absorbing all the juices of the shells;
  • Strain through a fine sieve or cheesecloth. Discard the shells and roots;
  • Pour coconut milk into the clear broth. Add salt and sugar;
  • Seafood is added last to prevent it from overcooking: shrimp only need to cook for 2-3 minutes, squid even less. Mushrooms, tomatoes, and onions come next;
  • Add lime juice. It's important to add it at the end to prevent the acid from curdling milk during long boiling. Tom Yum should be at the same time spicy, sour and sweet.

Serving Thai Tom Yum Soup:

  • Place sliced squid and tiger pieces into a soup bowl shrimp;
  • Pour boiling broth over it (it will cook the seafood until done) plate due to its temperature;
