Woeste No.2: An Irish Oyster with Atlantic Character
The shells in Woeste’s wooden case look as though the coast has shaped each one by hand. Folded ridges, uneven edges and muted colours give every oyster its own rugged beauty.
Their story leads to the cold Atlantic waters off the Irish coast. Here, Woeste is cultivated, developing the firm, meaty texture and rich, clean ocean flavour that define its character.
Irish waters, Dutch experience
The Premier name on the wooden lid introduces another part of the story. It belongs to Krijn Verwijs, a family seafood business based in Yerseke, in the Netherlands.
The family’s connection with oyster farming began in 1880, when Pieter Verwijs started cultivating oysters. Today, the business sources shellfish from its own growing areas and partner farmers, including producers in Ireland.
For Woeste, Irish growing waters and Dutch experience in selecting and handling oysters form two parts of the journey to the table.
Life in the rhythm of the tides
Along Ireland’s oyster-growing shores, much rock-oyster cultivation takes place in mesh bags raised on low trestles. These supports hold the oysters above the seabed, where the incoming tide brings seawater and plankton, their natural food.
As the tide retreats, farmers can reach the growing areas to sort and tend their oysters. Cultivation follows the movement of the water, combining natural feeding with regular, attentive work.
The growing location also helps shape an oyster’s flavour. Even different Irish bays can produce distinct impressions, giving each origin a place in the tasting.
A generous texture, a clear marine flavour
Woeste’s appeal centres on the relationship between substance and freshness. Its firm, meaty flesh gives it a full presence on the palate, accompanied by a rich ocean flavour with a clean character.
The No.2 beside its name indicates the size grade. In this generous calibre, texture becomes an especially enjoyable part of the experience: the substance of the flesh gives weight to the marine impression.
The shell as part of the experience
Once opened, an oyster’s shell holds both the flesh and its natural liquid. Enjoying a little of that liquid with Woeste offers another detail to appreciate: the freshness of the juices and the satisfying substance of the flesh.
It is an invitation to notice how those sensations belong together, allowing your own preferences to guide the pleasure.
At Doorsea, this taste of the Irish coast finds its place at a table in Riga — freshly opened oysters, good company and the sea still present in the shell.
